Vinification: Savagnin pressed on arrival at the winery to keep the delicate and fresh character then the juice allowed to settle followed by fermentation of 46 days.
Maturation: Following fermentation and MLF the wine was moved to barrel for 30 months ageing under flor. Bottled unfined and unfiltered.
